Christmas Dressing-Cajun Style

This is a great addition to any Christmas table. You can substitute the shrimp for any other kind of seafood, if you wish.

Serves 6-8

INGREDIENTS:
5 medium chayote (pear-like vegetables)
3 slices bacon, chopped
1 small white onion, chopped fine
1/2 cup chopped shallots
1 lb peeled and deveined shrimp
1 cup wet white bread, squeezed
to taste garlic salt
to taste salt and pepper
to taste Tabasco sauce
1/2 cup + extra seasoned bread crumbs
2 eggs, slightly beaten


PROCEDURE:

1) Peel the chayote, remove the center seed, & cut into large cubes. Then boil until fork tender (about 15 minutes).

2) In a large skillet, saute the bacon, onion, shallots, & shrimp until the shrimp are done (when they turn pink).

3) Add bread & seasonings to taste.

4) Mash the boiled chayote and add to the mix.

5) Add in the eggs slowly while stirring constantly. Then add 1/2 cup of bread crumbs.

6) Season with more garlic salt, salt, & pepper if necessary, then put the mixture into a greased casserole dish.

7) Top with pats of butter & sprinkle with bread crumbs. Bake at 350 degrees until well heated.
