Spicy Red Beans and Sausage over warm white rice is a quick fix for lunch or dinner. If serving for dinner add a green salad and corn bread to the menu.
2 16-oz Cans Goya Red Kidney Beans or Pink Beans
1/4 link Kielbasa, sliced into 1/4 thin rounds
1 Clove garlic, minced
1 Medium red onion, chopped
2 Tspn Cumin
5 or 6 dashes of Franks hot pepper or Tabasco sauce
Cooked white rice prepared according to directions for 6 servings
Keep cooked rice warm
Saute onions until limp; add Kielbasa and minced garlic, lower heat and continue for 5 minutes. Add beans, stir to blend and cook to simmering over low heat until sauce reduces a bit. This should take no longer than 5 to 7 minutes.
Serve beans hot over rice.
