Wheat Free Corn Loaf

I was very pleased with the taste of the Corn Loaf I purchased from Ener-G. This comes pre-sliced with about 12 servings in eight ounces. One serving consists of one slice at 50 calories, with 30 from fat.

I chose to try two slices in the toaster, but a microwave can be used for this Corn Loaf as well. It does take longer to get dark, which leaves the toast hard, but easy to spread Shedd's Spread over. The result was nice and crunchy in a good way. I ate every speck of toast on my plate.

I also had a fried egg which gave me the idea for an egg sandwich next time I have some of the Corn Loaf. There is no protein, sugar, cholesterol, trans fat, calcium or Vitamin C. The Corn Loaf is free of wheat, gluten, dairy, casein, egg and soy.

The website states - "Our bread is kept fresh through a highly developed vacuum packing process and guaranteed until each best before date on the package. With a long shelf life you can enjoy your favorites continuously."

The ingredients within the Corn Loaf by Ener-g is:

Filtered water, resistant corn starch, cold pressed high oleic safflower oil, tapioca flour, pear juice concentrate, bamboo fiber, yeast, sweet rice flour, methocellulose, guar gum, salt, glucono delta lactone, calcium phosphate. Enriched with thiamine (vitamin B1), riboflavin (vitamin B2), niacin, iron and folic acid.

Once I opened the package I placed half the slices into two ziploc bags with one going into the refrigerator and the other in the freezer. The bread slices are nice and soft with a good smell to them. There is a white label on the front that states they are best before 12-15-06.

I will be making another purchase of this New Corn Loaf by Ener-G. The cost was $4.05 when I ordered on 12-31-05. I noticed the price is now listed at $4.35. The site also has samplers where you can purchase two slices of various breads and purchase by the case. The Corn Loaf is item no. 4026. Ener-G is located in Seattle, Washington and has reasonable shipping charges.

My order placed on 12-31-05 was received via Federal Express on 1-10-06. I ordered a package of cookies, bread and three bags of pretzels with shipping at just $6.00.
