Ingedients
1 cup atkins bake mix
1/2 cup heavy cream
1/2 cup water
2 teaspoons creole or jambalya seasoning
1/4 cup finely chopped sweet onion
1/4 cup finely chopped celery
1 small jalapeno pepper, minced
3 tablespoons parsley, minced
1/2 teaspoon garlic powder
Salt and pepper to taste
Heat canola or other low fat oil for deep frying to 350f. Combine bake mix,cream and water to form a very thick (spoonable)batter/dough. (Start by adding 1/2 the water -then increase as needed) Stir in all remaining ingredients.Drop by tablespoons full of dough into hot oil and fry for 5-6 minutes or until golden brown. Drain very well and pat with paper towels. You can also add shredded cheese, finely chopped shrimp or crabmeat, etc to the batter for more variety. You may need to add a touch more water to get the desired consistency.
