Spicy Pork Tenderloin with Pineapple Salsa Recipe

Serve steamed veggies as a healthy side dish.

Ingredients
PORK
  • 2 tsp. canola or soybean oil
  • 2 pork tenderloins (3/4 lb each)
  • 1 tsp. black pepper
  • 1/4 to 1/2 tsp. ground red pepper (cayenne)
  • 1/2 tsp. salt

    SALSA
  • 1 8-oz can pineapplie tidbits, drained
  • 4 medium green onions, sliced (1/4 c)
  • 1/4 cup chopped red or green bell pepper
  • 1/2 tsp. grated lime peel
  • 2 tsps. lime juice
  • 1/4 tsp. salt

    Directions
    1. Brush grill with oil. Heat up grill. Rub 1 tsp. oil onto each pork tenderloin. Sprinkle with peppers and salt.

    2. Cover and grill over medium heat for 20 to 30 minutes, turning. Pork is finished when there is a slight pinkish color in center and thermometer in center reads 160 degrees Farhenheit.

    3. In medium bowl, mix all salsa ingredients. Cut pork into 1/2-inch slices.

    Serve with salsa.
