Fruit & Cream Salad

Fruit & Cream Salad

  • 1 can (15 oz.) sliced peaches
  • 1 can (15 oz.) apricot halves, cut into quarters
  • 1 can (15.5 oz.) pineapple chunks
  • 1 can (15 oz.) mandarin oranges
  • 1 cup mixed fruit juice, from the drained canned fruit
  • 1 large banana, sliced
  • 1 box (6-serving size) vanilla instant pudding mix
  • 1 container (8 oz.) frozen whipped topping, such as such as Cool Whip® - thawed

Preparation -
Drain the canned fruit, reserving a small amount of juice from each can, to equal 1 cup of mixed fruit juice. Pour the drained fruit and the sliced banana into a large bowl and stir to mix well. In a separate bowl, combine the 1 cup of mixed fruit juice with the instant pudding mix. Stir until smooth and thickened. Stir the mixture into the fruit. Spread the whipped topping on top . Chill for at least 2 hours before serving.
