This blend of savory and sweet makes a lovely side dish for pork chops or pork loin. Serve with anything from eggs to meat.
Onion and Apple Relish
3 large sweet onions, 1/4 thick slices
3 Granny Smith apples, cored and sliced 1/4 inch
3/4 stick of butter
Dash of nutmeg
Peel and slice cored apples. Place apples in cold water while peeling the onions. Peel and slice the onions.*
Over low heat, melt butter slowly in large pan, do not allow to brown.
Add sliced apples and cook until fork tender. Add sliced onions, mix with apples. Cook over medium low heat until onions are transparent. Sprinkle mixture with a dash of nutmeg. Serve.
A good buffet dish. Double or triple recipe and put in large dish so guests may serve themselves.
*Cutting the onions in a bowl of cold water may help to keep your eyes from tearing or at least cut down on those burning tears. Use a bowl large enough to be able to cut the onion without danger to cutting your hand.
*If serving with meat, for a nice presentation spoon onion and apple on plate, plate meat on top of relish.
*Raisins can be added to this relish, plump two teaspoons raisins in hot water and add to apple and onion mixture just before removing from heat. Stir to mix.
Recommended: Long before I knew what a mandoline was, I bought a vegetable slicer from an early infomercial, it lasted for years. My only caution is to be sure to use the little safety cover that goes on top of the vegetables when you are slicing vegetables, it is included for safety reasons.
