Chocolate Peanut Butter Bars Recipe

These delicious bars are great for a pre-workout energy boost or just as a snack. Also, these would be great for an on-the-go breakfast. Enjoy!

Ingredients
  • 3 cups Rice Krispies cereal
  • 1 cup oats
  • 1 cup dried fruit such as raisins, chopped apricots, cherries, and cranberries
  • 1/4 cup chopped peanuts (salted or unsalted)
  • 2 tbsp. ground flaxseed (optional)
  • Cooking spray
  • 3/4 cup packed brown sugar
  • 1/2 cup light peanut butter
  • 3/4 cup honey
  • 1/2 cup cocoa

    Directions
    1. Spray a large bowl with nonstick cooking spray; combine cereal, oats, dried fruit, peanuts, and flaxseed in bowl and set aside.

    2. In a medium saucepan, combine brown sugar, peanut butter, and honey over medium heat. Stir completely until melted and smooth. Remove from heat and stir in cocoa.

    3. Pour chocolate mixture over cereal mixture. Stir until evenly coated. Press into a 9 x 13 inch pan that has been sprayed with nonstick cooking spray. Before cutting into bars, cool in the refrigerator or at room temperature until set.
