While waiting at the seafood counter, I spent my time looking at the products on the nearby shelves. A small can caught my eye. The label said Millerís Select-Claw Crab Meat. Itís been awhile since Iíve had canned crab meat. Certainly, Iíve had the fake crab meat, surimi, quite a bit lately. Iíve even had fresh crab meat, but it has been years since Iíve tried the canned. Let me be clear here; it was expensive, at more than six dollars for a tuna-sized can. Iím pleased to report that it exceeded expectations and was absolutely worth the price. Millerís Select-Claw Crab Meat comes in a 6.5 ounce net weight can. This is two servings of 50 calories each. There are 5 grams of fat and 13 grams of protein in every serving. Thatís a lot of protein for a very few calories. I picked through the meat, and I did not find any shells. Of course, this may vary from can to can. When using canned shellfish, it is always a good practice to check for shells. I will buy this flavorful product again, and I highly recommend it.
Crab Salad Sandwich Recipe
1 tablespoon finely chopped sweet onion
3 drops of balsamic vinegar
1-6.5 ounce can Millerís Select Claw Crab Meat (Or, use your favorite comparable crab meat.)
ľ cup finely chopped tender celery and leaves
1 tablespoon Claussen Sweet Pickle Relish
2 tablespoons of Hellmanís mayonnaise
1/8 teaspoon freeze dried dill (I use Lighthouse brand.)
Pepper to taste
In a small bowl, mix the finely chopped onion and balsamic vinegar and let it stand for 5 minutes. Drain the liquid out of the crab meat and reserve the liquid for soup. If you are not using it immediately, store it in a freezer bag and freeze it for later use. Thereís a lot of flavor in that little bit of liquid. After the onion has rested in the vinegar, add the crab, celery, pickle relish, mayonnaise, dill, and pepper.
Mix the ingredients thoroughly and place in a covered container. Refrigerate for at least an hour to let the flavors develop. Then, use the crab salad to make your favorite type of sandwich.
*Grill sourdough bread or a bun for that special crab salad sandwich.
*Serve the crab salad in lettuce leaves for a low carb treat.
*Spread the crab salad on a Kimís Magic Pop or on crackers for an open face delight.
*Use a flour tortilla or pita with chopped veggies for extra fiber in your tasty crab salad.
Good quality canned crab meat is somewhat expensive. Certainly, it is a lot more costly than tuna or salmon. However, as an occasional treat, it is a pleasure to serve and eat.
