The BellaOnline Sandwiches Forum can be an exciting place when people are playing the Sandwiches Name Game. Itís easy to play. Give the name of a sandwich. The next person needs to name a sandwich that starts with either the first or last letter of the sandwich that you named. Hereís an example: Grilled Cheese. The next sandwich would need to begin with a G or an E. Itís a lot of fun, but the greatest thing about the game is the creativity that the players show. We have several wonderful players, and from time-to-time, Iíll be using their ideas for inspiration.
Todayís sandwich was inspired by Les Shulman, the editor of the BellaOnline Mexico site. Les has an extensive background in creating tasty foods. I took his idea of a chicken and rice hoisin burger, and whipped it up into a recipe for you to enjoy.
Chicken and Rice with Chinese Spice Burger Recipe
Ĺ cup fresh cilantro
6 green onions (white and green parts)
1 1/2 pounds skinless, boneless chicken thighs
2 tablespoons finely minced garlic
1 tablespoon finely grated fresh ginger
3 tablespoons hoisin sauce
1 tablespoon vinegar from pickled jalapenos
1 teaspoon salt
3 cups cooked rice (Use warm rice. I cooked a medium grain rice.)
In a food processor with a chopping blade, add the cilantro, green onions, and chicken. The chicken should be cut into pieces that are no larger than a pack of playing cards. Pulse the ingredients several times to mix the ingredients. Process until the chicken is chopped. Be careful not to process it into a mush. Remove the chicken mixture to a large bowl. Clean the food processor right away, or put it into warm soapy water to soak. Add the garlic, ginger, hoisin sauce, vinegar, salt and egg to the chicken mixture. Mix thoroughly. I used my hands for this step. Add the warm rice to the chicken and combine until just mixed. Cover the bowl and chill in the refrigerator for 1 hour. This will let the flavors develop.
Heat the oven to 350 degrees F.
Cover a jelly roll pan with aluminum foil. Spray the foil with non-stick cooking spray. Using a 1/3 cup measuring cup, scoop the hoisin chicken and rice onto the jelly roll pan. Flatten the mound with the bottom of the measuring cup. Continue scooping until all of the chicken and rice mixture has been used. It is fine if the burgers touch. The mixture should make about 12 burgers.
Bake at 350 degrees F. for 45 minutes. Chicken and Rice with Chinese Spice Burger Recipe may be used for flavorful wraps and sandwiches.
Wraps for Two
Condiments for the wrap:
1 teaspoon sugar
2 teaspoons Tamari soy sauce
2 tablespoons seasoned rice wine vinegar
2 tablespoons oil
1 cup finely sliced soft lettuce (I used a red butter lettuce)
Ĺ cup finely sliced celery (stalk and leaves-I used the tender, inner stalks)
ľ cup finely sliced sweet peppers
2 flour tortillas, warmed

Methods for making the wrap:
Combine the sugar, soy sauce, vinegar, and oil. Stir until the sugar dissolves and set this dressing aside. Add the lettuce, celery, and peppers to a small bowl. Pour the dressing over the vegetables and toss to mix.
Place each of the flour tortillas flat on a plate. Place half of the vegetable and dressing mixture down the middle of each tortilla. Crumble one Chicken and Rice with Chinese Spice Burger on top of the vegetables and dressing on each tortilla. Roll up like a burrito. You may want to slice the wrap diagonally for an interesting presentation.

Making the Sandwiches:
Dressing Ingredients and Method:
2 tablespoons Inglehoffer Stone Ground Mustard
1 tablespoon mayonnaise
2 tablespoons Fage Greek yogurt
2 tablespoons warm honey
In a small bowl, combine the dressing ingredients. Spread the dressing on two pieces of bread. Cover the dressing on each piece of bread with a Chicken and Rice with Chinese Spice Burger. Spread dressing on two additional pieces of bread. Cover the burgers with these pieces of bread. Divide the remaining dressing into two portions. Serve it on the side as a dip for the sandwiches. Suggestions for bread include Orowheat Double Fiber, Sandwich Thins, Sourdough bread, or ciabatta rolls.
