Maddy Kev of Alabama wrote to me about her biscuits and said I could share with you...try her suggestion!

"I've found when making biscuits..the less you mess with them..the lighter they will be..that is why..I only knead a little and form them by hand..my ex and still only real MIL..taught me that..and her biscuits could almost float--they were so light--best, lightest biscuits I've ever tasted and the deep south knows how to make em."

Knowing Maddy, her biscuits are perfect. Trying different ideas makes us better cooks! Biscuits can be stubborn sometimes so when all else fails...pull out your Bisquick or your Pioneer Baking Mix...follow Maddy's advice for kneading and I think you will be successful! For you cooks that are STILL having trouble even with the mixes, there is always canned biscuits! Just throw away the wrapping and don't tell anyone.

And from Tennessee: "I made the Biscuit and Gravy recipe last night, and it was VERY good. I am so happy that I know how to make my own biscuits and gravy now. The gravy was wonderful, I will be forever grateful!"
