This slightly spicy refreshing ginger [root] tea recipe was given to me by an elderly man from Northern Guyana. He used to bring a quart of it to work every evening, he swore it helped his indigestion and calmed his stomach. He once was told me that he went back home every December for a month, but he did not return in 1978 after the "Jonestown mass suicides."
4-½ Cups cold water
10 or 11 thin slices of freshly peeled ginger
Bring water to rolling boil, then slice the ginger and place into water. Turn heat off and cover and steep tea for 15 minutes. Remove ginger and refrigerate ginger tea until cold. Sweeten to taste with sugar syrup. Add ice and lemon slice if desired.
Make four 8 oz. Servings.
*Sugar Syrup Recipe. Bring to boil 1-3/4 cups of water and 2 cups of sugar for 5 to 10 minutes until sugar is completely dissolved and the mixture turns syrupy. Sugar syrup can be used to add sweetness to any cold drink. No waiting for sugar to dissolve.
