Corn and Paneer Sabzi Recipe

Ingredients

Thinly sliced Green pepper 3
Cubed Paneer 1 1/2 cups
Frozen sweet corn 1 cup
Cumin seeds 1 tsp
Asafoetida (hing) 1/4 tsp
Grated ginger 1 1/2 tsp
sugar 1 pinch
Chopped green chillies 1/4 tsp
Chopped coriander 3 tbsp
oil 3 tbsp
salt to taste

Method:

Make a fine puree of sweet corn kernels with 1/2 cup of water in a blender and keep aside.
Heat 2 tbsp of oil in a pan and fry the green pepper and paneer till they are lightly browned. Remove and keep aside.
Add the remaining 1 tbsp of oil in the same pan and add the cumin seeds and asafoetida.
Once the cumin seeds start to crackle, add the green chillies and ginger fry for a few seconds and add the pureed corn.
Add 1.5 cups of water, sugar and salt and bring it to a boil.
Add the fried green pepper, paneer and chopped coriander and mix well.
Serve hot with roti or parathas.
