This recipe makes enough dough for 16 medium loaves of fragrant, soft Pita Bread
1 1/2 cups lukewarm water
1 tablespoon yeast
1 tablespoon olive oil
3-3 1/2 cups flour
1 1/2 teaspoons salt
Place all the ingredients in an automatic bread maker according to the manufacturer’s instructions and turn the machine to the dough setting. Let the machine run, or if you are setting it before going to work, set it to end the dough cycle just when you are arriving home from work.
If you don’t have an automatic bread maker, you may mix the ingredients to a soft dough in a mixer with a dough hook. Cover the bowl with a towel and let it rise until double.
Remove the dough from the machine or mixing bowl, place it on a floured pastry cloth or work surface, and divide it up into 12 portions. Cover with a clean towel and let it sit while you either heat up the gas grill to high or the oven to 500°.
Line your oven shelf with unglazed quarry tiles prior to turning it on, or line your gas grill with the tiles.
Roll each round to a circle about 1/4 inch thick and 6 inches round.
Place the rounds on the heated quarry tiles and bake about 5 minutes or until lightly browned. Remove the loaves from the oven and place in a Ziploc bag to soften.
