It seems like everyone loves cooking Cajun food. How can you resist when every dish is so full of delicious flavors? If you enjoy making your own seasoning blends, try this classin blend of herbs and spices. It has just enough heat to let everyone know that the dish they are eating is pure Cajun.
Makes about 1 – 1/3 cups
4 tablespoons sea salt
4 tablespoons paprika
3 tablespoons garlic granules (cut in half if using powder)
1 tablespoon fresh ground pepper
2 tablespoons onion granules (cut in half if using powder)
2 tablespoons cayenne pepper
2 tablespoons dried thyme leaves, crushed
2 tablespoons dried oregano leaves, crushed
2 tablespoons dried parsley leaves, crushed
Blend all ingredients in a bowl. Store in airtight containers or jars away from light or heat.
If cayenne pepper makes you nervous, cut the amount in half and a give it a try. You can always add more.
For a finer texture, pour all ingredients in a food processor and pulse several times. I have an inexpensive electric coffee grinder that I use exclusively for grinding herbs and spices. It is handier to use than a bulky food processor and just requires a quick wipe with a paper towel to clean!
