Champagne Cocktails

Champagne cocktails have defiantly become more accepted as a good choice for a wedding reception. What is great about these drinks, they cross a section between a hard alcohol drink and a wine, or straight champagne. Some people don’t like champagne, and a good cocktail made with champagne makes it a little more desirable.

Champagne cocktails also make great drinks for a toast. They can be color coordinated to go along with your wedding theme colors. Champagne adds a great effervescence to regular alcohol, and brings life to plain ingredients. You can create drinks that are fit for royalty using a base of cheap Champagne.
Over the years I have created some great signature drinks, one of my favorite drink bases is Champagne.

The great thing about these cocktails, you do not need to buy expensive champagne. Yes, cheap bubbly works best. You are just using it for the bubbles. If you want a dry (no alcohol) wedding you can use sparkling cider instead of the Champagne and orange juice instead of the Cointreau

Champagne Cosmopolitan
1 1/4 cups Cointreau or Grand Marnier
1 1/4 cups cranberry juice cocktail
1/2 cup plus 2 tablespoons fresh limejuice
3 tablespoons superfine granulated sugar
4 cups chilled Champagne or other sparkling wine
Preparation
Stir together Cointreau, juices, and sugar and chill, covered, 2 to 6 hours. Just before serving, divide among 10 Champagne flutes and top off with Champagne.

Champagne Mojito
30 mint leaves muddled
1 1/4 cups lime juice
3 tablespoons superfine granulated sugar
6 cups chilled Champagne or other sparkling wine
Crushed ice

Muddle mint and ice together with the lime juice. A stainless steel bowl works great for the amount required. Use the bottom of a cocktail shaker if you do not have a muddler. Sprinkle the sugar on the muddled mixture. Pour the mixture in a pitcher and top of with the Champagne. Serve quickly.
