Roasted Vegetables Recipe

Winter vegetables develop rich, succulent flavors when cooked at high heat in a roasting pan.

Potatoes, beets, turnips, carrots, onions, and other root vegetables bring caramelizes the natural sugars in the vegetables and creates a whole new world of flavors. The colors and textures are intensified.

Directions

  1. Put all the vegetables and the garlic in a roasting pan.
  2. Drizzle the olive oil over all the vegetables. Stir makign certain to coat all the vegetables.
  3. Sprinkle the rosemary, salt, and pepper over the vegetables.
  4. Cook for 45 minutes at 450F.
  5. Stir half way through the cooking process.
  6. The vegetables will be dark brown and tender when done.
