Christmas Jelly Sandwich Cookies

Use red and green jelly in these colorful, festive Christmas Cookies. Use green apple jelly and red raspberry, strawberry or cherry jelly.

2 eggs - lightly beaten
1 cup butter, slightly softened
1/2 cup sugar
1 tsp. cream of tartar
4 cups flour
2 -1/2 cups jelly
Confectioners' sugar

Preparation -
In a large mixing bowl... beat the eggs, butter and sugar together. Mix in the cream of tartar. Add the flour, about a cup at a time and mix until well blended. Cover the bowl and refrigerate for at least five hours or overnight. Roll out the chilled dough on a lightly floured surface. Roll to about 1/4" thickness. Cut with a 2" to 3" round cookie cutter. Place the cut, unbaked cookies on an ungreased cookie sheet. Bake in a preheated oven at 350º for 10 to 12 minutes or until very lightly browned. Remove the baked cookies from the oven and let cool on wire rack. When completely cool, spread a very small amount of jelly on a cookie, about one half teaspoon or less, depending on the size of the cookies. Top with a second cookie to make a cookie sandwich. Repeat with all the remaining cookies. Dip the sandwich cookies in confectioners' sugar. Store in a covered container. Arrange the cookies in the container in layers, with a sheet of waxed paper between each layer.
