Heavenly Hash Brownies

When it comes to brownies, rarely does anyone ride the fence. Cakey or fudgy, that is the question. If youre trying to decide on a brownie recipe and you see that the ingredients call for baking powder, cakey may be the result. Gooey, and dense with traces of chocolate left on your fingers usually means fudgy. Fudgy also means a little goes a long way.

Tips for Better Brownies
Mix ingredients by hand. If you use an electric mixer you run the risk of over beating them. Over beating your brownies may result in the production of too much gluten. Too much gluten will make your brownies springy and bread like.

Take care not to over bake your brownies. Most of the time its a good idea to slightly under bake them to achieve the desired texture. Over baked brownies will form a tough cookie like crust around the edges and on the bottom.

Use the pan size called for in the recipe. A pan that is too large, will cause the batter to spread and over bake. Over baking means a dry brownie. A pan that is too small makes an under baked brownie. There is a big difference in a slight under baking for a fudgy texture and uncooked raw batter.

Heavenly Hash Brownies
cup unsweetened cocoa
cup butter, melted
nonstick vegetable spray
2 large eggs
1 cup granulated sugar
2 tsp vanilla
1 cup flour
1/4 teaspoon salt
1 cup walnuts, chopped
cup chocolate chips
1- 2 cups mini marshmallows

Preheat oven to 350F. Grease an 8 inch square pan or line with parchment paper or foil. In a medium bowl combine melted butter and cocoa and stir until cocoa is dissolved. Add sugar and mix well. Add eggs one at a time and stir until well combined. Stir in vanilla, flour and salt until flour disappears Fold in walnuts, marshmallows, and chocolate chips. Spread in pan and bake for approximately 25 minutes. Give brownies the toothpick test at 20 minutes so that you do not over bake them. If you have a temperamental oven adjust the time and temp accordingly. If you do the toothpick test, it should come out with moist crumbs, so dont despair if its not clean. Cool completely before cutting into squares. To double recipe, bake in 9x12 pan and add 5 minutes to baking time. Still test 5 minutes before the minimum baking time is up.

This may be going overboard, but if you serve this with a side of heavenly hash ice-cream, you will be in dessert heaven.
