Cranberry-Oatmeal Bar Cookies

Cranberry-Oatmeal Bar Cookies

With dried cranberries and oatmeal as main ingredients, these old-fashioned bar cookies are a healthy snack.

  • 1/2 cup sugar
  • 2/3 cup brown sugar
  • 1 container plain or vanilla low-fat yogurt ( 8-oz)
  • 2 egg whites - lightly beaten
  • 2 T. vegetable oil
  • 2 T. milk
  • 2 tsp. vanilla
  • 1 1/2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 3 cups oats - quick or old fashioned
  • 1 cup. dried cranberries
  • non-stick cooking spray

Preparation -
Lightly spray a 9" x 13" baking pan with non-stick cooking spray and set aside. Combine the sugar, brown sugar, yogurt, egg whites, oil, milk and vanilla in a large bowl and mix well. In a separate bowl, combine the flour, baking soda, cinnamon, and salt. Add the dry mixture to the other mixture and mix well. Stir in the oats and dried cranberries. Spread the batter in the bottom of the prepared baking pan. Bake in a preheated oven at 350° for 30 minutes or until very lightly browned. Cool on a wire rack. When completely cool, cut into bars. Store in a tightly covered container.
