Connie's Coconut Chocolate Chippers Recipe

Almost every family has a favorite cookie recipe that they bake often. Because these recipes are made over and over, they become a “fall-back” when time is short. While often not fancy or innovative, these time-honored cookies spell comfort for family members. Connie Boulton’s family and friends always loved her Coconut Chocolate Chippers, and requested them frequently. Usually there were a dozen or so in the cookie jar, but, of course, they had to be replenished often. Connie’s Coconut Chocolate Chippers have a chewy texture, and are especially good warm from the oven. They store for a week or so in an airtight container, or can be frozen for months.

About 5 dozen cookies

1 cup shortening
1 cup sugar
1/2 cup brown sugar
2 eggs
2 teaspoons vanilla
2 cups flour
1 1/2 teaspoons salt
1 teaspoon baking soda
2 cups semisweet chocolate chips
2 cups coconut
  1. Preheat oven to 350°.

  2. Cream the shortening and sugars; add the eggs and vanilla and beat until light and fluffy.

  3. Add the dry ingredients and mix well.

  4. Stir in the chocolate chips and coconut.

  5. Scoop or drop by tablespoonfuls onto parchment-lined or well-greased baking sheets and bake for 10-12 minutes.

  6. Remove to cooling racks.

  7. Store in an airtight container.
