Vegetable Recipes

I thought I'd put up a few great last minute casserole recipes for those looking for a new twist on vegetables. I'm working on this right now and it's such a good recipe! We're going to have a late evening meal with family so I've still got plenty of time. For those of you celebrating Thanksgiving you all have a great holiday! Stay safe and enjoy the time together. Sweet Potato Casserole

Ingredients:
4 large sweet potatoes baked in 350º oven until tender
1 cup sugar
1 cup milk
2 eggs
1 tsp vanilla
1 tsp salt

Topping:
1 cup brown sugar
1 cup pecans, chopped
1/2 cup flour
3/4 stick butter, softened

Directions:
Leave oven on 350ºF. After baking the sweet potatoes, scrape the insides out into a medium sized bowl. Add sugar, milk, eggs, vanilla and salt. Mix with a potato masher or mixer. Spread this mixture in the bottom of a casserole dish.
Mix the topping ingedients with a fork or pastry blender until well mixed and spread over the sweet potato mixture in casserole dish.

Bake in oven 1/2 an hour or until golden brown on top. This is so good!!

California Medley Recipe

1/2 large bag California Medley vegetable (frozen, cauliflower, broccoli and carrots)
1 large can cream of chicken soup
1 stick butter, melted
1 large can french fried onions
1 regular size can of cream of celery soup
1 1/2 cups shredded cheese (your favorite kind is fine)

Preheat oven to 400º F. This can be made in crock pot if you have plenty of time but for now we'll just cook the vegetables on the stove until almost tender. Remove from stove and drain well. Add soups, cheese and butter and mix in 1/2 of the french fried onions. Place in a casserole dish and top with the remaining french fried onions. Bake until bubbly. Serve hot. This is a really delicious casserole!

Combo Veggie Casserole

Very similar to the above but instead of using the California Medley vegetables put in
2 cans of French style green beans, drained,
1 can of corn, drained, and
1 can of carrots, drained.

Now.. add
1 regular can of Cream of Mushroom soup and
1 regular can of Cream of Celery soup.
1 stick of butter, melted
1/2 large can french fried onions
1 1/2 cups shredded cheese

Add these ingredients to the vegetables and place in casserole dish. Top with the remaining 1/2 can of french fried onions. Bake until bubbly and heated through.

If you want to make this more of a main dish you can add cubed ham or chopped cooked chicken to this and it's great that way also!
