Pumpkin Pudding

Pumpkin Pudding

  • 1 pkg. instant vanilla pudding mix - large size
  • 1 - 12 oz. can evaporated milk
  • 1 3/4 cups pumpkin puree - canned or home cooked
  • 1/2 tsp. cinnamon
  • 1/4 tsp. ginger

Preparation -
Prepare pudding in a blender, food processor or mixing bowl, according to directions on package but use a 12oz. can of evaporated milk instead of the milk specified on the package. Chill prepared vanilla pudding for 10 minutes. Combine pumpkin puree and spices. Stir into pudding and mix thoroughly. Chill before serving.

To serve - Spoon into dessert dishes; Sprinkle very lightly with a cinnamon sugar mixture. Top with cool whip or whipped cream just before serving.
