Have you ever been in the situation where you are ready to serve a delicious meal and need a fast and easy flatbread to serve on the side? Try this terrific recipe with most ingredients straight from your cupboard. The true value is the versatility of this recipe in that the bread can be fried or baked.
Fast and Easy Flatbread
2 cups Bisquick
2/3 cup yogurt
2 TBL ghee (clarified butter)
1/4 cup mixed cheeses (parmesan/cheddar?)
2 tsp parsley
2 tsp (garlic powder, coriander powder, cumin crushed - be creative here and try your own favorite herbs and spices)
Preheat oven to 450 degrees - if you are going to bake them
Preheat skillet with some olive oil - if you are going to fry them
Mix ingredients, incorporating cheeses and spices well. Roll out onto surface dusted with dry Bisquick and knead. Let stand for ten minutes.
Shape into discs and flatten out. Brush with olive oil/ghee mix.
Bake for 10 to 12 minutes or fry until golden brown on each side
Delicious Flatbread Recipe
2 TB. yeast - Red Star
2 tsp. sugar
1 Cup warm water
3 TB. olive oil
2 tsp. salt
2¾ - 3 Cups flour (all purpose)
Topping:
2 tsp. OREGANO
2 tsp. ROSEMARY
2 cloves MINCED GARLIC
1/2 tsp. CRUSHED RED PEPPERS
3 TB. olive oil
1 tsp. coarse salt (to taste)
Place yeast and sugar in a mixing bowl. Add warm water. Mix with a spoon to blend. Let stand for 5 minutes.
Add 3 TB. olive oil and 2 tsp. salt, mix well. Add flour 1/2 cup at a time, blending in with a spoon. Stop once you have added 2 1/2 Cups of flour, and use the rest of the flour on the table while you are kneading.
Divide the dough into four pieces, knead each one briefly into a nice round shape, then place on an olive oil covered baking sheet. Roll the dough balls over until covered with oil, then let stand for 20 minutes. The dough will start to get puffy as it rests.
Prepare the topping. Place the spices into a small bowl, add olive oil. Stir to blend, let stand.
Flatten out dough disks until you have circular shapes roughly 6-8" across. The dough should be about 1/4" thick.
Preheat the oven to 400º. Use two cookie trays and place 2 bread rounds on each one. Use a brush or your fingers to spread the spice/oil mix out over the bread.
Once the spices are spread over the top, sprinkle with salt, let rest for another 20 minutes, then bake for 15 minutes, until golden brown. Remove, cool briefly, cut and serve.
Serve either recipe as the palette for any delicious meal particularly Indian curries and chutneys. Enjoy!
