Recipe for Irish Potato Rolls

The potato has played a significant role in the history and traditions of Ireland. It is an ingredient that is used in hundreds of Irish dishes, and remains one of the most popular foods of Ireland. Potatoes add moistness to bread and rolls, as well as a fine texture. These Irish potato rolls are perfect for serving on St. Patrick’s Day or as an accompaniment to any Irish meal. They are quick and easy since the dough is made in the automatic bread machine; hands-on time is minimal. These rolls are shaped like rosette buns. You can use leftover mashed potatoes in these rolls, or instant mashed potatoes to save time. If possible, these should be served warm with lots of real butter.

Bread Machine Irish Potato Rolls


24 dinner rolls

1 1/2 cups warm water
1 egg
1/3 cup non-fat dry milk
1/2 cup mashed potatoes (leftover or made from warm water mixed with potato flakes)
1/4 cup shortening
1 1/2 teaspoons salt
4 to 4 1/2 cups flour
1 tablespoon yeast

  1. Pour the warm water into the pan of the automatic bread machine.

  2. Add the egg, powdered milk, mashed potatoes, shortening, salt, 4 cups flour, and yeast (in that order)

  3. Set the machine to the dough cycle

  4. When the cycle has been running for 5-10 minutes, check to make sure the dough has formed a ball. If the ball is very soft and won’t hold its shape, add a little more flour; if the dough is very stiff, add a little more water so that it will be soft.

  5. When the dough cycle is finished, transfer the dough to a floured surface, preferably a lightly floured pastry cloth

  6. Pat the dough out to a 12 x 12” rectangle.

  7. Using a pizza cutter, cut the dough into 12 1” wide strips; cut the strips in half lengthwise, forming 24 strips.

  8. Tie each strip into a knot, tucking the ends under; place each knot on a parchment-lined or greased baking sheet.

  9. Let the rolls rise until double in bulk

  10. Bake in a preheated 375° oven 15-20 minutes or until golden brown..
