PBJ Sushi Three Ways

These simple recipes are nutritious, delicious, and portable. You can eat them for breakfast, lunch, or dinner. You can even make appetizers with them at your next kid’s birthday party. Roll them up; pack them in your kid’s lunches for school.

Take them traveling with you for snacks. They are the perfect complex carbohydrate and protein combination for your busy, hungry children. You can also roll these in parchment paper, freeze them, and defrost them in your fridge over night for the next day. You can’t go wrong with PB&J Kids Sushi!

*PBJ Sushi Recipe #1*

Ingredients:

1 whole grain tortilla per person
2 tablespoons natural peanut butter per tortilla
2 tablespoons natural fruit spread, no sugar added, per tortilla
1 large banana, whole, peeled

Directions:

Spread entire tortilla with peanut butter first, then fruit spread on top of the peanut butter. Make sure your layers are light, not too thick, or it will ooze out of the sides of tortilla when cut.

Add banana to the bottom of tortilla. Break it up if you have to, so that it is a perfect log, and not “bent.” Fold bottom of tortilla over banana, and roll.

Slice Peanut Butter Banana Sushi into sushi bite size pieces. One sushi tortilla roll up is one serving.

Ingredients:

2 slices whole grain or whole wheat bread, trimmed of all crust
2 tablespoons natural nut butter
2 tablespoons natural, no sugar added fruit spread

Directions:

Make sure crust is removed from bread slices. Roll out the bread with a rolling pin. Spread one side of each slice of bread with the peanut butter and fruit spread. Roll up like sushi, and cut into bite size pieces.

2 slices of bread makes one serving.

Ingredients:

1 recipe “Clean Pancakes”, found here, in my archives
1 recipe “Fruit Reduction,” found here in my archives under “Clean Pancake Toppings”
Several tablespoons of all natural nut butter (peanut, almond, cashew, any natural nut butter)

Directions:

Make clean pancakes recipe, being sure to thin the batter out just a little with water, so that your pancakes will cook thinly, and be easily to roll. Follow pancake recipe directions for cooking time.

When pancakes are done, spread each one with a couple tablespoons each natural nut butter and fruit spread. You can even put fresh fruit in the middle, or use pure maple syrup. Roll up pancake, and slice into sushi bite size pieces.

2 pancakes equal one serving.
