Fourth of July Desserts

Each year millions are getting ready for the holidays to celebrate with family and friends. Picnics and cookouts galore and what goes better with people and fun than great looking and tasting foods??? From watermelon boat fruit salads to great layered fruit desserts you can’t beat these mouth watering treats to cool you down on a hot day!

Celebrate the Fourth of July with a colorful, cool refreshing fruit salad this year. To start you off right try some of these delicious recipes at your event.

Honey Melon Salad

3 cups cubed seeded red watermelon
2 cups blueberries
1 cup julienned jicama
2 cups cut star fruit sliced across
1/4 cup lemon juice
2 Tbsp. oil
2 Tbsp. honey
1/4 tsp. salt
1/8 tsp. white pepper

Combine lime juice, oil, honey, salt and pepper in a bowl and blend well. Mix immediately with the fruits and jicama. Chill well before serving. Serves 8

Stars & Stripes Fruit Salad

1 1/2 cups fresh mango, cubed
1 cup fresh pineapple
1 banana, sliced
1 1/2 cups strawberries, sliced or cut into quarters
1 cup other tropical fruit, such as dragon fruit, lychees, longans, or rambutans
1 cup ripe blueberries
Garnish with starfruit slices
Dressing:
1/2 cup coconut milk (not too thick)
1 1/2 Tbsp. freshly-squeezed lime juice
1/4 cup sugar

Stir fruit salad dressing ingredients together in a cup until sugar dissolves. Set aside.
Place all the fresh fruit in a mixing bowl.
Pour the dressing over and toss well to mix.
Pour or scoop the fruit salad into a serving bowl, or into a prepared pineapple or watermelon boat. Garnish just before serving with a star fruit slice.

Patriotic Layered Fruit

One of the simplest recipes you can make and they make a great splash!

Just layer blueberries then cool whip, then strawberries and continue layering these ingredients to the top of the cup or glass. Garnish with a slice of star fruit before serving. Serve chilled and serve.
