Triple Decker BLT

Another classic favorite is the BLT (Bacon, Lettuce & Tomato sandwich). Alone or as a side with a bowl of soup, this traditional sandwich has been served for years and across many regions of the United States.

Starting out as a brunch item utilizing left over breakfast toast and bacon and adding a "salad" of lettuce, tomato and mayo, this sandwich has gone from ladies clubs to boardrooms to school lunchrooms.

This recipe is a thicker, heartier portioning based upon the classic:

Triple Decker BLT
4 slices of white bread, lightly toasted, crusts optional
2 tbls. mayonnaise or garlic aoili
2 romaine or iceberg leaves
9 slices of bacon, cooked crisp
1 sliced tomato, medium
salt, pepper to taste
other seasonings (e.g., Mrs. Dash, etc.,)

Spread the mayonnaise on one side of each of the slices of bread.
Layer one slice of bread with lettuce, three slices of bacon, and tomato slices. Add seasoning to taste.
Put another slice of bread on top, mayonnaise side up. Layer again with lettuce, bacon and tomato.
Top with third slice of bread and add remaining lettuce, bacon and tomato. Top with a final slice of bread.
Cut into four equal triangles and spear with a toothpick. Serve.

This is a hearty meal option for anyone in the family and for many occasions. Whether it be individual servings for game day at home or a lunch picnic at the park, the triple decker BLT is sure to satisfy all of your guests' appetites.

Try varying this sandwich by changing the mayonnaise with added spices or seasonings. Even changing to coarse ground sea salt and/or white pepper creates a difference in flavor that can enhance the first summer tomatoes in a unique and inviting way.

Always be cautious when transporting or serving any sandwich that includes mayonnaise. Keep the sandwiches chilled and cool if you've already adde the mayo. Or keep the mayonnaise chilled and separate until you get ready to serve. Then, quickly add a few swipes of mayonnaise to each inner surface of the bread just before passing the sandwiche out to your guests.
