Rotisserie Chicken Sandwiches Recipe

When you don't feel like cooking, how do you get good nutrition? A rotisserie chicken can be a bargain. With this fully cooked meat, you can make many different chicken dishes, including some delicious sandwiches.

For the frugal, it doesn’t get a lot better than this. Rotisserie chickens are available at many grocery stores. The ones that are labeled heavyweight are the best buy. Made fresh all day, these chickens come in various flavors. Bring a rotisserie chicken home and have a hot meal using the wings, legs, and thighs. Then, chill the chicken, and cut the breasts into thin sandwich sized slices. After most of the meat has been used, pull the rest of the meat off of the bone and chop it into small pieces. Use these for making chicken salad, chicken enchilada casserole, or to put into soup. Take the carcass and put it into a large pan of cold water. Add celery, onion, peppers, and mushrooms. Cook the carcass for about 3 hours. Strain the broth to use in recipes. I like to keep broth on hand in the freezer.

In the heat, some people prefer cold food. It feels lighter and fresher during those times when heat seems to overwhelm your appetite. Others, like my son, always want a heated sandwich. This article will give you recipes for both, using slices of rotisserie chicken breast. Each recipe is for one sandwich.

Cold Chicken, Muenster, and Bacon

Ingredients:

1 oval hard roll or bolillo
Non-stick cooking spray
3 ounces sliced rotisserie chicken breast (this should be enough to cover the roll)
2 thin slices of Muenster cheese
1 tablespoon of cooked bacon bits (I get this on my local salad bar)
2 tablespoons of mayonnaise
1 teaspoon pear infused balsamic vinegar
˝ teaspoon dill weed
2 shakes of onion powder
˝ cup of arugula
1 slice of tomato

Method:

Slice the hard roll horizontally. Spray it with non-stick spray. Place the roll with the oiled side down into a warm skillet. Cook on medium heat. Watch it carefully. After the roll is grilled to your preferred brown color, take the roll halves from the pan and lay them, ungrilled side down, on a plate. This helps the roll to keep its crunch.

While the roll is grilling, make the sauce. In a small bowl, mix the mayonnaise and balsamic vinegar. Rub the dill between your fingers into the mayonnaise mixture. Shake the onion powder into the bowl. Stir to mix it.

After the roll has cooled, spread it with the sauce. On the rounded side of the bun, sprinkle the bacon bits, add one slice of cheese, and cover the cheese with the sliced chicken. Add the second slice of cheese, layer arugula and tomato on top of the cheese. Cover with the bottom of the roll.

Warm Chicken, Swiss, and Bacon

Ingredients:

1 oval hard roll or bolillo
Non-stick cooking spray
3 ounces sliced rotisserie chicken breast (this should be enough to cover the roll)
2 thin slices of Swiss cheese
1 tablespoon of cooked bacon bits (I get this on my local salad bar)
2 tablespoons of mayonnaise
1 teaspoon pear infused balsamic vinegar
˝ teaspoon dill weed
2 shakes of onion powder
Butter lettuce leaves
1 slice of tomato

Method:

Slice the hard roll horizontally. Spray it with non-stick spray. Place the roll with the oiled side down into a warm skillet. Cook on medium heat. Watch it carefully. After the roll is grilled to your preferred brown color, take the roll halves from the pan and lay them, ungrilled side down, on a plate. This helps the roll to keep its crunch.

While the roll is grilling, make the sauce. In a small bowl, mix the mayonnaise and balsamic vinegar. Rub the dill between your fingers into the mayonnaise mixture. Shake the onion powder into the bowl. Stir to mix it. After the roll has cooled, spread it with the sauce. Place the lettuce leaves and tomato on the flat part of the roll.

Place the sliced chicken on a microwave proof plate in the shape of the roll. Sprinkle the bacon over the chicken and cover it with the Swiss cheese. Microwave until the cheese starts to melt. Use a spatula to scoop it onto the prepared flat part of the roll. Cover with the rounded part of the roll. The bacon and cheese add moisture to the chicken breast, and it becomes a succulent treat!
