Everyone Loves Cupcakes

Cupcakes, simply…..I love them. I love the trend, I love the taste. Well really who doe not like cupcakes. The cupcake idea is so creative and inspirational. To me it is seeing the tiers or pedestals of mini, different flavored cakes. Brightly decorated with their own personalities.

You are probably wondering why I am so worked up about these little morsels, Well I was just at a wedding where they had little cupcakes in clear packaging, with gift tags attached. The theme was seaside vacation. The gift tag had a little poem on it from the bride and groom. Essentially it was about a dreamed seaside vacation and sharing together with them, an offering of food.

It is such a romantic idea, I really wish I came up with this one. These morsels were decorated in several shades of blue icing. They had candy starfish and shells as well as silver non pareils. Then they were gently dusted with blue and white sanding sugar. Can you imagine, beautiful seaside blue confections…

Of course I had to start creating my own, I already have some great recipes for cupcakes. This is a favorite.

Soon to Be the Star Cupcakes
1/2 cup butter at room temperature.
1 3/4 cups sifted all-purpose flour
1 egg, beaten
1 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon sea salt
3/4 cup heavy cream
1 teaspoon vanilla ( please use real vanilla ladies)
Pre-heat oven to 375 degrees.
Place butter in mixing bowl.
Sift all dry ingredients together in separate bowl.
With a hand or stand mixer, mix the dry ingredients in slowly with the butter
Add 1/2 cup cream and the beaten egg to the dry ingredients and beat until flour is fully moistened.
Add the remaining cream and the vanilla and beat for sixty seconds
Place your fancy paper liners in muffin pan and fill halfway full with the batter.
Bake at 375 degrees F for 15 to 18 minutes, check with a toothpick for doneness.

When these tasty bites come out of the oven let them cool completely. You want the icing to go on smoothly. So decorate in your desired theme, pop them in a transparent cupcake box. These are available all over the web. You have a great wedding favor, or just a great thank you.
