When you are in a hurry to make something tasty to take to a potluck or family gathering, look no further. These simple pinwheels take almost no mixing of ingredients. You just spread the filling and roll them up! They are made with ingredients that we often have on hand in the pantry or fridge. If you don’t have the exact ingredients, be creative and use what you have. These little pinwheels are so simple that your children can make them if you are busy!
Caramel Apple Pinwheels
1 Braeburn apple
1 Gala apple
2/3 container of Philadelphia Indulgence Dulce de Leche Caramel spread
1/4 cup of toasted pecans
2 fresh flour tortillas (Try to get these at a Mexican bakery, if possible.)
Coarsely grate the washed apples. I used my KitchenAid food processor to make quick work of the grating. Put them in a bowl and set them aside. Using your hand, squeeze a bit of liquid out of the apples. In a small bowl, mix the squeezed apples with 2/3 container of the caramel. Spread one of the tortillas with half of the caramel apple spread. It should reach to within ¼ inch of the edge. Lightly sprinkle with cinnamon. Add half of the toasted pecans evenly over the caramel-apple-cinnamon mixture. Roll the pinwheel up tightly, burrito-style. Repeat with the second flour tortilla. Wrap the pinwheel rolls up individually foil or plastic wrap. Refrigerate immediately. The rolls need to chill at least four hours. They may be in the refrigerator up to 24 hours.
Caramel Nutella Banana Pinwheels
1/3 container of Philadelphia Indulgence Dulce de Leche Caramel spread
1/4 – 1/3 cup of Nutella
1 large banana
1 fresh flour tortilla
Spread one-half of one tortilla with 1/3 of the container of caramel spread. It should reach to within ¼ inch of the edge. Spread the other half of the tortilla with the Nutella. Place the banana at the edge of the side of the tortilla that is spread with Nutella. Roll the tortilla tightly toward the caramel side. When the tortilla is completely rolled burrito-style, wrap it in foil or plastic wrap. Refrigerate immediately. The roll needs to chill at least four hours. It may be in the refrigerator up to 24 hours.
Peanutty Tropical Banana Pinwheels
1/2 cup peanut butter (More or less peanut butter depending on how thick you want to spread it.)
1/4 cup of toasted coconut (optional)
1 large banana
1 fresh flour tortilla
Spread a tortilla with the peanut butter. It should reach to within ¼ inch of the edge Sprinkle the toasted coconut evenly over the peanut butter. It should not completely cover the peanut butter Place the banana at the edge of the tortilla. Roll the tortilla tightly burrito-style. Wrap the pinwheel roll in foil or plastic wrap. Refrigerate immediately. The roll needs to chill at least four hours. It may be in the refrigerator up to 24 hours.
Assembling a Tray
Choose the size tray that you want to take to your special event. Unwrap a pinwheel roll and place it on a cutting board. Slice the ends off of the pinwheel roll. Those are the cook’s reward! Next, slice the roll into pinwheels. (Pinwheels made with bananas should be sliced as close to serving time as possible, so that they don't become brown.) Cut into slices 1/2 to 1 inch thick. Use 1/4 of the tray. Start from the outside and line the edge with pinwheels. For the next row, you will put the pinwheels at an angle, and they will rest on the outer row. Continue adding pinwheels, working toward the center of the tray, until they are all used.
Next, get a different type of pinwheel roll and repeat the process on the next fourth of the platter. Continue doing this until the platter is full or the pinwheels are all on the platter. If there is open room in the center of the tray, rinse and dry some grapes. Cut them into clusters of 5-8 grapes, and pile the clusters in the middle of the tray. If you don’t have grapes, you may use strawberries, mild cheese cubes, or wrapped chocolates. This will look gorgeous on any table.
