During the football season, as a personal chef, I am frequently asked to design a buffet theme idea and a menu for that theme as hosts/hostesses prepare for entertaining during the coming gridiron conflicts and celebrations!!

FOOTBALL FRENZY(Buffet)

Corned Beef "Burgers"

Brat(wurst) and Cheddar Skewers

Dips with crunchy dark breadsticks

Sides: sauerkraut, sweet and spicy mustard selections, and pickled (sweet) onions.

Chocolate Lava Muffins and Blond Lava Muffins

The corned beef "burgers" were inspired by my husband (who doesn't care for the traditional method of serving corned beef with cabbage. Instead, he wanted a fast sandwich. So, I combined the corned beef with a few italian-seasoned bread crumbs and a little egg; made patties and fried them hot and fast in a skillet on our stovetop. Served on an onion roll with a bit of spicy mustard and a little drained sauerkraut, we had a "touchdown" of a meal for the whole Super Bowl gang.

About the same time, many hunters in my area want to showcase some of their season's fruits. This is a great way to introduce friends and family to a wilder menu.
