First, keep in mind that traditional menus for Easter are all about celebrating the fresh crops that have begun to come in. Not too long ago, people did not have freezers and world-wide harvest cycles. We ate what was available locally. That meant that until Easter, we were suffering with dried foods from last year's harvest. Easter was a celebration of the birth of spring, of the new bounty that was beginning.
First, appetizers. Eggs are one of the primary symbols of Easter - the symbol from the very beginning of a new life. Eggs were used by many cultures to celebrate the coming of a new season of planting. Make up a batch of devilled eggs!
