Spinach Bacon Toss

  • 1/2 cup vegetable oil
  • 1/3 cup sugar
  • 1 small onion, quartered
  • 3 T. vinegar
  • 2 tsps. prepared mustard
  • 1/2 tsp. celery seed
  • 6 slices bacon
  • 6 cups torn spinach leaves
  • 1 cup sliced fresh mushrooms
  • 2 hard-boiled eggs, sliced

Preparation -
To make dressing - In a blender, combine oil, sugar, onion, vinegar, mustard and celery seed. Process until smooth. Cover and chill. Fry bacon until crisp; drain and crumble. In a large salad bowl, combine spinach, mushrooms, eggs and bacon; pour dressing over salad. Toss lightly. Makes 4 servings
