Spinach Quiche

Spinach Quiche

  • 1 pkg. frozen chopped spinach
  • 1 -8 oz. pkg. low fat cream cheese
  • 4 large eggs - beaten
  • 4 oz. swiss cheese - grated
  • 1/4 tsp.salt
  • 1/8 tsp. pepper
  • 1 unbaked 9" pie shell
  • 2 oz. parmesan cheese -grated
  • nutmeg

Preparation -
Cook spinach and drain. Blend cream cheese and spinach together Allow mixture to cool. Add eggs. salt and pepper. Place grated swiss in pie shell. Pour egg and spinach mixture over top. Top with parmesan cheese and nutmeg. Bake at 350º for 35 to 40 minutes or until center is set.
