Coffee Ander-Carrot Cake Muffin

What is a Coffee Ander? It’s a treat you eat with your coffee of course! And what a treat this one is. It is my own world famous Carrot Cake Muffin.

I may not like sugar in my coffee, but eating something sweet with my coffee certainly appeals to me.

This is my recipe for carrot cake muffins which is, hands down, going to be your most delicious carrot cake muffin ever.

It does not need icing or anything else. Just a great cup of coffee and you will be in heaven.

Sorry guys it is not diet, but it does contain a lot of good for you ingredients like carrots and walnuts. I am sorry to say it does not qualify as a vegetable in your daily totals.

RECIPE

2 cups of flour
2 cups of sugar
1 ½ cups of canola, corn or vegetable oil
2 teaspoons of nutmeg (I use a bit extra of this)
2 teaspoons of cinnamon (I use a bit extra of this)
2 cups of carrots finely grated (1-16 oz bag will do the trick)
4 eggs
2 teaspoons of baking soda
½ teaspoon of salt
1 teaspoon of vanilla
½ cup of shelled walnuts (I added more on top of each after pouring into the pan)

Makes 24 muffins

Here is ½ Recipe for 12 muffins. This way you won’t have to think if 24 muffins are too much.

1 cup flour
1 cup of sugar
¾ cup of canola, corn or vegetable oil
1 teaspoon of nutmeg (I use a bit extra of this)
1 teaspoon of cinnamon (I use a bit extra of this)
1 cup of carrots finely grated (1/2 of a 16 oz. bag will do the trick)
2 eggs
1 teaspoon of baking soda
¼ teaspoon of salt
½ teaspoon of vanilla
¼ cup of shelled walnuts (I added more on top after pouring into the pan)

INSTRUCTIONS

No need for a mixer here. I use a big wooden spoon to mix.

Mix oil and sugar together.
Add eggs one at a time-mix well after each.
Add vanilla.

In a separate bowl, sift dry ingredients (if you don’t have a sifter, use a strainer—it works just as well).

Add to mix in thirds.

Fold in grated carrots and mix thoroughly.

Note: If the grated carrots are too big, they will make your muffins doughy.
(To get the carrots grated finely on my Cuisinart, I run them through the grater blade and then through the chopper)

Add walnuts (If you are using whole shelled walnuts, break them up so they are not so large although some people like them this way).

Fill muffin pan with muffin liners for easy clean up or:

-spray the pan with Pam or other vegetable spray. Then dust with a little flour
-or, grease with shortening or oil. Then dust with a little flour.

Bake at 350 degrees for 35 to 40 minutes and test for doneness-a toothpick in the center should come out clean. Remember that ovens do vary.

Okay now, go make yourself a great cup of coffee and enjoy. The smell in your home will be heavenly. They make great gifts too. Make up a basket and sprinkle a bit of confectioners sugar on for presentation. Add a nice coffee mug and a special grind or whole beans.

The full recipe batter can also be poured into you favorite cake pan (Bundts are great) and again, no icing needed. Bake for 1 hour and 15 minutes. Just sprinkle with confectioners sugar and serve.
