Soulful BBQ Sauce

With the 4th of July approaching & grills preparing to be fired up, this recipe is sure to be a hit! I've been feasting on this recipe non-stop in the past month or so. I use it on Spare Ribs but friends who I gave the recipe to, have tried it on BBQ chicken as well. If you try it, please let me know. I'd love to hear how you liked it!

Coca Cola BBQ Sauce

2 tbsp. butter
1 tsp. mustard
2 tsp. vinegar
1 sweet onion (or shallot), finely chopped
2 cloves garlic, minced
1 bay leaf crumbled (or fresh sage, chopped small)
2 c. catsup
16 oz. bottle Coca-Cola
1 tbsp. Worcestershire sauce
1 cup of Brown Sugar
Salt and pepper to taste

Heat the butter in a large saucepan over medium-low heat.
Add the garlic and onions.
Cook for 5 minutes but do not "brown" them.
Add the rest of the ingredients.
Simmer, stirring occasionally for 1 hour.
Makes about 1 1/2 cups.
