Cucumber, Tomato, & Onion Salad Recipe
At the end of summer there are usually a few cucumbers and tomatoes still growing in the garden. After using them all summer for different dishes, it’s nice to have a recipe for something different that brings out the fresh flavors of the garden vegetables. This Cucumber, Tomato, and Onion Salad makes good use of cucumbers and tomatoes, and takes only about 10 minutes to put together. The summer vegetables and their fresh, homegrown taste will be gone soon, so it’s the best time to make this quick salad. It goes well with almost everything – grilled meats and poultry, casseroles, or simple foods on weeknights. This salad can be made an hour or two ahead to let the flavors blend, but also can be served as soon as the dressing is tossed in.

This salad is a good choice to take to a pot luck, or to an end-of-summer gathering. Cucumber, Tomato, and Onion Salad is also low fat, healthy, and colorful, and it tastes fresh and delicious. You can vary the amounts of cucumbers and tomatoes depending on what you have in your personal garden. This is proof that simple dishes are sometimes the best.

12 Servings

2 cucumbers, pared and sliced
2 fresh tomatoes, diced
1/4 red onion, quartered and sliced

Dressing:
1/4 cup white wine vinegar
1/4 cup water
1 tablespoon olive oil
2 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon pepper
  1. Mix the cucumbers, tomatoes, and red onion in a serving bowl.
  2. Whisk or whizz the dressing ingredients (a bullet blender works well) and pour over the cucumber mixture.
  3. Stir well and refrigerate until serving time.
