Cheesy Broccoli, Cauliflower & Carrot Bake

Cheesy Broccoli, Cauliflower & Carrot Bake

  • 15 Ritz® Crackers
  • 3 cups broccoli florets
  • 3 cups cauliflower florets
  • 1-1/2 cups sliced carrots
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 12 oz. processed cheese, cut into cubes
  • 2 T. butter

Preparation -
Spray a 9" x 13" baking dish with non-stick cooking spray; set aside. Place the crackers in a plastic bag and crush; set aside. Cook the broccoli and cauliflower florets in boiling water for 5 minutes. Cook the sliced carrots until tender. Place the broccoli, cauliflower and carrots in the prepared baking dish. Add salt and pepper. Top with the cheese cubes. Scatter the cracker crumbs over top. Dot with butter. Bake in a preheated oven at 350º for 30 minutes.
