Key Lime PIe

Key Lime Pie

  • 5 egg yolks
  • 1 can (14 oz.) sweetened condensed milk
  • 1/2 cup lime juice
  • 1 - 9 " pie shell - lightly baked
  • 5 egg yolks
  • 1/2 cup sugar
Preparation -
Place the egg yolks in a large mixing bowl. Beat on low speed with an electric mixer for about one minute. Add the sweetened condensed milk, then the lime juice and stir to mix well. Pour the filling into the lightly baked pie shell. Bake in a preheated oven at 350° for 12 to 15 minutes or until the filling is lightly set. Cool on a wire rack for about 1/2 hour. Beat the egg whites on high speed with an electric mixer until the egg whites can form and hold soft peaks. Fold in the sugar. Spread the meringue over the slightly bake lime filling. Bake in a preheated oven at 375° for 10 to 12 minute or until the meringue is lightly browned on top of the peaks. Cool on a wire rack for about 45 minutes. Refrigerate to chill completely before serving.
