Slow Cooked Pork Barbecue Sandwiches

Slow Cooked Barbecued Pork Sandwiches

  • 3 to 4 lb lean boneless pork roast
  • 1/2 tsp. garlic powder
  • 1 tsp. salt
  • 1/4 tsp.pepper
  • 2 large onions. coarsely chopped
  • 1 can (12 oz.) Coca-Cola
  • 1-1/2 cups bottled hickory smoked barbecue sauce
  • 3/4 cup water

Preparation -
Spray the inside of a crock-pot with non-stick cooking spray. Trim any visible fat from the pork roast. Place it in the crock-pot. Sprinkle with seasonings. Top with chopped onions. Pour the Coca-Cola over top. Cover and cook on low for 8 hours. Remove the roast from the crock-pot. Discard the onions and liquid. Pull apart and shred the pork with a fork, removing any remaining fat. Place the shredded pork back in the crock-pot. Mix the barbecue sauce and water together. Pour over and stir into the shredded pork. Cook on low for 2 more hours. Serve on kaiser rolls or large sesame-seed hamburger buns.
