Mudslide Summer Dessert Recipe

Here's an easy to prepare recipe for a cool, rich and creamy summer dessert.

• 3/4 flour
• 1 cup finely chopped pecans
• 1/2 cup butter
• 1 pkg. (8 oz.) cream cheese, regular or low-fat - softened to room termperature
• 1 cup Confectioners' sugar
• 1 small container ( 8 oz.) frozen whipped topping, such as Cool Whip - regular or lite, thawed
• 1 small box ( 3 oz.) chocolate instant pudding
• 1 small box ( 3 oz.) vanilla instant pudding
• 3 cups milk

Preparation -
Mix the flour and chopped pecans together in a small bowl. Melt the butter. Using a fork, mix the melted butter into the flour/pecan mixture. Press into the bottom of a 9" x 13" inch baking pan. Bake in a preheated oven at 350º for 20 minutes. Let cool to room temperature. Mix the softened cream cheese and Confectioners sugar together until well-blended. Fold in 1 cup of the whipped topping. Spread this mixture evenly over the cooled pecan crust; set aside. Combine the pudding mix with the milk and beat at medium speed until thickened. Spread evenly over the layer of cream cheese. Spread the remaining whipped topping over the pudding layer. Chill for at least one hour before serving.
