Apple Pie
1 1/2 c. apples, chopped small
1 1/4 c. sugar
1 egg, beaten
1/2 stick margarine
Dash cinnamon
Dash salt
1 unbaked pie shell
Mix first 6 ingredients together and pour into unbaked pie shell. Bake 35 minutes at 350 degrees.
Baked Beans
1 lb. great northern beans, 1 tsp. mustard, 1 tsp. salt, 1 tsp. onion powder
3 tbsp. ketchup, 3 tbsp. molasses, 1/2 c. brown sugar
1/4 tsp. pepper, 1/4 lb. salt pork, 1/4 tsp. baking soda
Soak beans overnight. Start beans in cold water with 1/4 t. baking soda. Boil and pour off all water. Add fresh water to cover, cook until tender with salt. Add rest of ingredients except salt pork. Cook salt pork until tender and add to beans. Also add a few tablespoons of fat from pork - cook at 325 degrees for 2 hours, if dry add a little more water. Serves 8-10.
Strawberry Glazed Pie
1 (9 inch) pie shell, baked, cool, 3 oz. cream cheese, 2 tbsp. milk
2 pt. strawberries, halved, 1 c. water
1 c. sugar, 2 tbsp. cornstarch
Spread softened cream cheese with 2 tablespoons milk and layer on the bottom of the shell. Fill the shell with 1 pint of strawberries, halved. Cook another pint of strawberries in 1 cup of water; mash well. Combine 1 cup of sugar and 2 tablespoons cornstarch. Add to mashed berries. Stir until thickened. Cool slightly and pour over berries in shell.
Bacon Wrapped Scallops
24 large sea scallops
Seasoned pepper
Bacon strips
Cook bacon gently until partially cooked but not crisp and still very flexible. Rinse scallops with running cold water, pat dry with paper towels. Cut each bacon slice crosswise in half; wrap each half around a scallop, securing with a toothpick. Sprinkle scallops lightly with seasoned pepper. Preheat broiler. Place scallops on rack in broiling pan. Broil 4 to 5 inches from heat for 8 to 10 minutes, or until scallops turn opaque throughout, using tongs to turn scallops frequently so bacon will brown evenly on all sides.
Barbecued Beef Ribs
8 lb beef ribs
1 c. chopped onion
1 tsp instant minced garlic
1/4 c. oil
2 tsp prepared mustard
1 c. tomato puree
2 c. sugar
2 tbsp soy sauce
1 c. white vinegar
2 bay leaves
1 tsp hot pepper sauce
1 tsp barbecue spice
2 tsp salt
Arrange beef ribs on rack in baking pan. Sauté onion and garlic in oil until golden. Add mustard, tomato puree, sugar, soy sauce, vinegar, bay leaves, hot pepper sauce, barbecue spice and salt and simmer about 15 minutes. Strain.
Brush barbecue sauce generously over beef ribs, covering them thoroughly. Cook over hot coals 10 -15 min. on each side, depending on thickness. Baste frequently with sauce until beef ribs are tender and well done.

Memorial Day is a U.S. federal holiday celebrated the last Monday in May. This day was originally known as Decoration Day because it was a time set aside to honor the Nation’s Civil War dead by decorating their graves. Over the years Memorial Day has evolved to a day to remember and pay respect to all of those who have died defending America’s freedom and also our own loved ones who have gone on before us. Family and friends traditionally get together and celebrate the lives of those around them and honor the memories of those who have died.
