Baked Sweet Potatoes

Baked Sweet Potatoes

    Wash and scrub sweet potatoes.

    Oven Directions - Pierce them with a fork to allow steam to escape while baking. Place on a small baking sheet and bake at 350º or until tender when pierced, about an hour or longer, depending on size.

    To microwave - Place sweet potatoes in batches of 2 to 4 in microwave oven - on a paper towel or shallow baking dish. Pierce with a fork to allow the steam to escape. Microwave on high power for about 5 to 6 minutes per sweet potato or until tender when pierced with a fork.

    For summertime meals - Brush skins very lightly with oil or melted butter. Begin baking in microwave oven, then transfer to a medium hot covered grill and continue baking until fork tender.

    Sweet potoatoes are best if baked until well done and very tender. To serve, cut each sweet potato in half and fluff the inside with a fork. Top with butter or margerine. Sprinkle with brown sugar and cinnamon to taste.
