All About Kabobs

Grilling season is here! Kabobs are definitely on the menu at my house. Grilled fruit and cheese kabobs and broccoli beef kabobs are some of my favorites! Kabobs are so easy to prepare and pop on the grill or in the oven if the weather is not obliging. Some of these recipes can be made ahead of time and frozen or refrigerated until you are ready to use them. Just thaw them out and fire up the grill. If you like kabobs these delicious recipes will be sure to please everyone on your guest list. Caesar Beef Kabobs

Total Preparation and Cooking Time:
35 minutes

Makes 4 servings.

1 pound boneless beef top sirloin steak, cut 1 inch thick
4 small new potatoes (about 1/2 pound), cut into quarters
1 medium red bell pepper, cut into 1-inch pieces
1 small onion, cut into 1-inch pieces
1/2 cup prepared non-creamy Caesar dressing
Salt and pepper

1.) Place potatoes in 8 x 8-inch microwave-safe dish; cover with vented plastic wrap. Microwave on HIGH 4 to 7 minutes or until potatoes are just tender, stirring once. Cool slightly.
2.) Cut beef steak into 1 1/4-inch pieces. Combine beef, potatoes, bell pepper and onion in large bowl. Drizzle with all bt 2 tablespoons of the dressing; toss to coat. Alternately thread beef and vegetables onto eight 9-inch metal skewers.
3.) Place kabobs on grid over medium, ash-covered coals. Grill, uncovered, about 10 to 12 minutes for medium rare to medium doneness, turning occasionally. Season with salt and pepper, as desired. Drizzle kabobs with remaining 2 tablespoons dressing before serving.

Nutrition Information per serving: 283 calories; 28 g protein; 19 g carbohydrate; 10 g fat; 466 mg sodium; 77 mg cholesterol; 4.8 mg niacin; 0.7 mg vitamin B6; 2.4 mcg vitamin B12; 3.8 mg iron; 5.9 mg zinc.
