Sweet Potatoes with Apples

Sweet Potatoes with Apples
  • 4 large sweet potatoes, peeled and cut into 1/2" thick slices.
  • 3 large apples, such as Granny Smith - peeled, cored and cut into wedges
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cinnamon
  • 1/4 cup maple syrup
  • 2 T. butter, melted
  • 1/4 cup coarsely chopped pecans

Preparation -
Spray the inside of a crockpot or slow cooker with non-stick cooking spray. Place the sweet potato slices in the bottom of the crockpot. Add the apple wedges. Top with the cinnamon and nutmeg, then with the syrup and melted butter. Cover and cook on low for 4 hours or until the sweet potatoes are tender. Sprinkle the chopped pecans over top and cook on low for 30 more minutes.
