Creamed Spinach

Creamed Spinach

  • 5 T. butter or margarine - divided
  • 1/4 cup flour
  • 1/4 tsp. salt
  • 4 oz. cream cheese (regular or low fat), softened
  • 1 cup half n' half
  • 1/4 cup grated Parmesan cheese
  • 2 T. finely chopped onion
  • 1 T. minced garlic
  • 1 - 10 oz. boxes frozen chopped spinach - thawed
  • 1/4 cup water

Preparation -
Melt 3 tablespoons butter in a saucepan, over medium-low heat. Add the flour and salt; cook and stir until well blended. Add the cream cheese and half n' half. Cook over medium heat, while stirring constantly or whisking, until the mixture is thickened and smooth. Remove from heat, stir in the Parmesan cheese, then set aside. In a large skillet, over medium-low heat, sauté the onion and garlic in the remaining 2 tablespoons butter. Add the thawed spinach and water. Cover and cook, stirring occasionally, for 8 minutes. Stir the creamed sauce into the spinach mixture.
