Slow Cooked Barbecue Meatloaf


Slow Cooked Barbecue Meatloaf

This recipe for moist and flavorful meatloaf is designed for a slow cooker or crockpot.

  • 2 lbs. lean ground beef
  • 1 can (10-1/2 oz.) tomato soup
  • 1 egg, lightly beaten
  • 1 cup Ritz crackers - finely crushed
  • 2 T. honey
  • 1 T. plus 2 tsp. Worcestershire sauce, divided
  • 2 T. minced onion
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup water
  • 2 tsp. prepared yellow mustard
  • 3 T. brown sugar

Preparation -
In a large mixing bowl, combine the ground beef with one half of the tomato soup. Add the lightly beaten egg, the crushed Ritz crackers, honey, 2 teaspoons Worcestershire sauce, minced onion, salt, and pepper. Using your hands or a large wooden spoon, mix all the ingredients into the ground beef. Form the mixture into into a ball or a loaf shape. Place it in the cooking vessel of a slow cooker or crockpot. Whisk the remaining tomato soup with 1 tablesppoon Worcestershire sauce, 1/2 cup water, 2 teaspoons prepared yellow mustard, and 3 tablespoons brown sugar. Pour the mixture over the meatloaf. Place the cover on the slow cooker or crockpot. Set on the low setting and cook for eight hours.
