Rotisserie chickens are a blessing in the summer. You can have a sandwich meal put together in a flash without heating up the kitchen. A good rotisserie chicken can give you a lot of meat for those special sandwiches. In the winter, those chicken bones can give you the means to make a great soup stock. I love buying a large chicken that I don?t even need to cook. It is the ultimate fast food.

Below are some sandwiches that can be made from rotisserie chicken. Some of them are hot and others are cold. Customize your sandwiches to suit your tastes.

Rotisserie Chicken Sandwich Ideas

*Artichoke dip on a grilled bun with melted Muenster cheese and hot rotisserie chicken.
*Light vinaigrette dressing on shredded lettuce, alfalfa sprouts, slivered onions, sliced tomatoes, provolone cheese, and sliced chicken in a pocket pita.
*Dark meat chicken with mayo, soy sauce, sesame oil, thinly sliced almonds, and grated daikon in a pita.
*Grapes, walnuts, fresh tarragon, mayo, and chopped chicken mixed together and served with spinach leaves on a croissant.
*Sprouts, Pico de Gallo, chopped dark meat chicken, and pepper jack cheese heated in a grilled tortilla.
*Avocado slices, sliced chicken breast, bacon, red onion, bell pepper, and alfalfa sprouts on whole grain toast with mayo.
*Nuts, muffaletta, cream cheese, mayo, and chicken mixed together and stuffed into a pita pocket with butter lettuce.
*Warm barbecue chicken sandwich layered with coleslaw and thinly sliced pickles on a hoagie bun.
*Green chilis, green onions, chicken, all diced and mixed with mayo and mashed together, then served on a crispy artisan bun.
*Hot chicken chunks in gravy, open face on toasted sourdough bread.
*Nutty grain bread with guacamole, chipotle pepper, chicken, alfalfa sprouts, and sliced tomato.
*Dark meat rotisserie chicken chopped and mixed with mayo, sliced grapes, chopped walnuts, chopped celery and onion, parsley and dill, and black pepper, piled on a fresh croissant and topped with butter lettuce and sliced tomato.
*Olive salad, sliced white meat chicken, melted Muenster cheese, with fresh spinach leaves on grilled sourdough bread.
*Rotisserie chicken, radicchio, spring greens, green onions, cherry tomatoes, baby squash, cucumber, and peppers finely chopped and wrapped in a flour tortilla with freshly grated Parmesan and Ranch dressing.
*Mushrooms, thickly sliced, marinated and grilled, then layered on an artisan roll with sliced rotisserie chicken, pesto, spinach, and melted provolone.
*Multigrain bread grilled with muffaletta, Swiss cheese, and sliced chicken breast.
