Pressure cooking, especially in the newer Instant Pots, is all the rage, and there are dozens of cookbooks out there to choose from. Jill Selkowitz, creator of the popular blog This Old Gal has done an excellent job filling this cookbook with recipes that real people will actually want to cook. The recipes are well-written and easy to follow, and so far, every recipe tried has turned out picture perfect.

Even though recipes made in the pressure cooker and Instant Pot are generally faster, some of the recipes in this cookbook have very long lists of ingredients. Gathering ingredients together and then measuring can generally take a bit of time. However, in every case so far, the end results have been definitely worth it. There are photographs of most of the dishes, which make them even more mouthwatering.

Favorite recipes from this book include both Greek Meatballs and Vietnamese-Style Meatballs in Sauce, as well as Indian Butter Chicken and Orange Glazed Pork Chops. Risotto lovers will welcome the recipe for Wild Mushroom Risotto (very quick and easy in the Instant Pot), and the Mexican Pork Carnitas are delicious. Selkowitz has included some excellent homemade seasoning mixes, as well as sauces such as basic Spaghetti Sauce, Sweet and Sour Sauce, and Tzatziki Sauce. There are recipes from all parts of the globe, so cooks can avoid the same-same at dinnertime. There is an excellent recipe for basic mashed potatoes that works perfectly every time, and of course, the instructions for making hard-boiled eggs perfectly without a green ring, that peel easily.

Quite honestly, you can’t go wrong with this cookbook. It is one that will be used over and over because there is enough variety to keep cooks and their families and friends happy for years to come. This cookbook is excellent.
